House Hunting Hell

The last 3 months have been crazy! I never thought looking for homes would be so difficult. Maybe because me and him are both very specific and particular about what we want. But isn't that what everyone is? So we have been on the search for our perfect home to start a family and our lives together in. Since we are very future thinking, our goal is a 4 bedroom home at least with an open floor plan to entertain, and modern upgrades. We would even settle for no upgrades and do it ourselves if the price was right. Sounds easy enough right? That's what I thought, until 3 months into our search and very few to choose from. At least the economy is bouncing back up. Seems like every time there is a potential home, there's always something that goes wrong.  *Le Sigh*
Our search continues, but lucky for us we do have some time if we really needed to. We wanted to move sooner than later but there is no real rush for us to move as the house we are in now is fine, for now at least.
Another option was building our own. So lately we have been setting out to look for land/lots that would be big enough to accommodate at least 2400 square feet with a backyard for our puppies. Decisions, decisions.

Sweet Pork & Eggs {Viet Style}

Mama’s cooking is always the best. For years and years I’ve strived to learn even 1/4 of what my mom makes. Let me tell you, that is some hard work. That woman can cook! Anyways here’s a recipe I learned from her, although my version probably does not do it justice! I ended up making this splur of the moment. I bought a 8pound bag of pork shoulder for pulled pork. Definitely ended up with way too much pork so I split and used some for this dish.
To start off here’s the ingredients you need; pork (for this one I used pork shoulder), eggs, salt, pepper, garlic, fish sauce, sweet soy, and coconut soda.



To start off I boil the eggs to make hard boiled eggs before I start preparing the pork. While the eggs are boiling, I cut the pork into 1-2 inch cubes. Once the meat is ready, you can sauté it with some garlic, oil, salt and pepper. Once its seared on both sides, I added in a couple tablespoons of sweet soy sauce. Looks a little like this;



Then onces it’s pretty browned I add in the coconut soda. Now when you first add it it bubbles up. I tend to turn down the heat to low so that it can simmer for awhile. By this time, the eggs should be ready. Add in the eggs without the shells (of course;) and let it simmer for about an hour. You can taste it throughout and add in more salt and pepper if needed. Sometimes I even add it more sweet soy if its too salty for my taste. It’s basically up to your preference. This dish is served over rice and soo delish!
